Quick answer: Delivery contribution margin is the money left from an order after the restaurant's direct order costs and the deductions that actually apply to that order. Calculate it from your own statement and recipe data, not from a public commission-rate estimate.
Contribution margin helps an owner decide whether an item, platform promotion or delivery zone deserves attention. It is not the restaurant's final profit: rent, salaried labour, marketing, tax treatment and other overheads still need separate analysis.
Use the order-level formula
For a review period, calculate:
Delivery contribution margin = net food revenue - recipe cost - packaging - restaurant-funded discounts - contract deductions - refunds and adjustments - other direct order costs
Use the definitions in the signed platform agreement and its statement. A label such as fee, campaign, adjustment or compensation can have a different meaning across platforms and contracts.
An illustrative AED example
This example is only a template. It is not a platform fee quotation, tax calculation or recommended restaurant price.
| Illustrative order record | AED |
|---|---|
| Net food revenue recorded by the restaurant | 80.00 |
| Less recipe cost | (24.00) |
| Less packaging | (3.00) |
| Less restaurant-funded promotion | (5.00) |
| Less contract deduction shown on the statement | (16.00) |
| Less refund or other direct adjustment | (0.00) |
| Illustrative contribution margin | 32.00 |
In this example, contribution margin is AED 32.00 and the contribution-margin percentage is 40% of the AED 80.00 net food revenue. Do not insert a generic commission percentage into this template: replace each line with the value shown in the restaurant's own records.
Establish the source record for each input
| Input | Evidence to use | Owner question |
|---|---|---|
| Net food revenue | Order record and platform export | Does the order total match before deductions? |
| Recipe cost | Current recipe, purchase cost and yield record | Is the cost current for this menu version? |
| Packaging | Item or order packaging record | Does the bundle include every required component? |
| Discount | Campaign approval and settlement record | Who funded it and was it approved? |
| Contract deduction | Settlement statement and signed schedule | What exactly does the label cover? |
| Refund/adjustment | Order issue log and settlement line | Was it customer, restaurant or platform initiated? |
The recipe costing guide explains how to build the cost side of the calculation. The menu pricing guide explains why a price should be checked against both cost and market expectations.
Review by item, campaign and channel
Do not average away the decision. Start with a small group of high-volume or high-complaint items, then review:
- An item with strong sales but weak contribution after packaging or discounts.
- A campaign where order count increased but restaurant-funded promotions erased the gain.
- A cancellation or remake pattern that points to preparation, availability or menu-quality issues.
- A platform where statement deductions cannot be traced cleanly to order-level evidence.
Use the result to test a menu, packaging or operational change. Do not use it to assume a platform, customer segment or outlet will perform the same way next month.
Keep the calculation separate from tax filing
Contribution margin is an operating view, not a VAT return. Preserve the gross order, relevant invoices, settlement evidence and tax records, then have a qualified UAE tax adviser confirm the treatment used for the restaurant's circumstances. The VAT on delivery and aggregator orders guide provides related records to discuss with that adviser.
Where TajerGo can support the operating record
TajerGo's configured recipe, inventory and profitability views can help an operator review food cost and order-type reporting where the underlying records are complete. They do not by themselves prove platform fees, settlement figures or a third-party delivery-platform connection. Review restaurant reporting features, restaurant inventory features and the cloud kitchen POS guide for the relevant product scope.
Frequently asked questions
What is delivery contribution margin?
It is the amount remaining from a delivery order after direct restaurant costs and the deductions that apply to that order. It is a decision metric, not the restaurant's full net profit.
Should I use a standard commission rate in the calculation?
No. Use the restaurant's own signed terms and settlement statement. Public estimates can be stale, incomplete or inapplicable to the outlet, campaign or order type being reviewed.
Do customer delivery fees belong in the restaurant's margin calculation?
Only include a customer charge when the restaurant's agreement and settlement show that it is revenue or a cost of that order. Do not assume its treatment from the customer-facing app.
How often should I review delivery contribution margin?
Review high-volume items and active promotions regularly, and review the full channel whenever a statement, menu, campaign or contract changes.
